Super Easy Minestrone


I made this the other night and me oh my it is delish. As a sidenote I used Golden Roma Tomatoes so the color of the soup turned out a little strange but regardless....Mmm steamy goodness in a bowl.



  • 3 cubes beef bouillion

  • 2 cups water

  • 1 (12 oz) can corn

  • 1(16 oz) crushed tomatoes
  • 1 (18 oz) can undrained lima beans
  • 4 Tbs dried onions
  • 1/2 tsp pepper
  • 1/4 tsp basil
  • 1 large diced carrot
  • 1 small green zuchini
  • 1/2 C Uncooked macaroni

Dissolve Bouillion cubes in water at medium heat. Add remaining ingredients. Cover and simmer 30 minutes.

Serves 3-5 people
