2 ½ C Rice Krispies
2 C quick-cooking oats (I used regular and it was fine)
½ C raisins
½ C firmly packed brown sugar
½ C light corn syrup
½ C peanut butter
1 tsp vanilla extract
½ C milk chocolate morsels
Combine first 3 ingredients in a large bowl. Set aside. Bring brown sugar and syrup to a boil in a small saucepan over medium-high heat, stirring constantly; remove from heat. Stir in peanut butter and vanilla until blended. (Make sure peanut butter is all melted in) Pour peanut butter mixture over cereal mixture, stirring until coated. Let stand 10 minutes*. Stir in chocolate morsels. Press mixture into a 9x13" pan; cool in pan on wire rack. Cut into bars.
*My mixture was cool enough by the time I got done stirring that I didn't wait the 10 minutes to add the chocolate chips. I just stirred them in and put it in the pan.
Additional Note: Instead of the raisins and chocolate chips I bought some trail mix in the bulk section of WinCo. It was a mix that had regular raisins, golden raisins, sunflower seeds, mini chocolate chips, cashews and peanuts in it. I substituted a cup of the trail mix for the raisins and chocolate chips in the recipe and separated out the chocolate chips to add at the end. (I know…it sounds tedious, but it only took a couple of minutes!)
My kids LOVE these, so I usually double the recipe and put it in my biggest sheet pan. I cut them into bars and wrap each one in wax paper or plastic wrap and they eat them all week.

I forgot to mention that you can also sub craisins for the raisins and white choc. chips for the milk choc. chips and they're really good, too. You can put just about anything in these.
Tried these today and loved them. I think using a trail mix or something with nuts and seeds is a must because it turns out so good and adds a bit more crunch. This is such a simple recipe I'll be doing this often and I can see myself using a bunch of different ideas...craisins, m&ms, coconut, that last 1/2 c of cereal in the box (we love grape nuts crunch around here and it's great for upping fiber when sprinkled on your regular cereal). A perfect after-school snack or take along to the park!
