Oatmeal Scotchies

1 cup softened butter
¾ cup sugar
¾ cup packed brown sugar
2 eggs
1 tsp. vanilla
1 ¼ cup all-purpose flour
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
3 cups oatmeal
12 oz. butterscotch morsels

Preheat oven to 375 degrees. In small bowl, combine flour, baking soda, salt and cinnamon, set aside. In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla until creamy. Gradually beat in flour mixture. Stir in oats and butterscotch morsels. Drop by spoonfuls onto greased cookie sheets. Bake 8-10 minutes. Cool for 2 minutes. Makes 4 dozen.

Originally Karen's recipe...now Brian's favorite! Takes me back to the days when she made a ton of these ready-to-bake in the freezer and we ate fresh-baked cookies nightly. Sooo good...not so good on the hips. I do keep these baked and on hand in the freezer though - it makes Brian happy.
