Chinese Chicken Salad

4 lrg Chicken Breasts, cooked and cut up
1 lrg head Green Cabbage, thinly sliced & chopped (can also buy the already cut up kind)
½ head Purple Cabbage (if desired)
1 bunch Green Onions, chopped
3 pkgs Ramen Noodles (oriental or chicken flavored)
4 Tbsp. Sesame Seeds
4 Tbsp. Slivered Almonds
Sliced Chestnuts (if desired)

Bake the noodles, sesame seeds, and almonds at 350 degrees, stirring often, until brown. Mix with rest of ingredients. Top with following dressing:

Chinese Chicken Salad Dressing

4 Tbsp. Sugar
3 Tbsp. Soy Sauce
2 Tbsp. White Vinegar
1 cup Canola Oil
1 tsp. Pepper
Flavor packets from noodles

Mix together well and pour over salad.

(I usually half it and it makes plenty for 4+ people. I don’t usually have sesame seeds, purple cabbage or chestnuts on hand and it still tastes great! Season the chicken while you cook it if you like.)
