Shepherd's Pie

This particular recipe comes from kraftfoods.com *so does the picture - as if my photos ever look like that!*. I'll usually do up two of these 9x9 pans and freeze one for an easy dinner another night. See below for additional notes.

1-1/4 lb. red potatoes, cut into chunks
3 large cloves garlic, peeled
3/4 cup Light Sour Cream
1/2 cup Sharp Cheddar Cheese, divided
1 lb. extra lean ground beef
2 Tbsp. flour
4 cups frozen mixed vegetables, thawed
3/4 cup reduced-sodium beef broth
2 Tbsp. ketchup

PLACE potatoes and garlic in large saucepan; add enough water to cover. Bring to boil. Reduce heat to low; simmer 20 min. or until potatoes are tender. Drain; return to saucepan. Add sour cream; mash potatoes until smooth. Stir in 1/4 cup of the cheese.
PREHEAT oven to 375°F. Brown meat in large nonstick skillet. Stir in flour; cook 1 min. Add vegetables, broth and ketchup; cook 5 min. Spoon into 8-inch square baking dish; cover with potatoes.
BAKE 18 min.; sprinkle with remaining 1/4 cup cheese. Bake an additional 2 min. or until cheese is melted.

Easy Shepherd's Pie
Mashed Potatoes
1 lb. ground beef
1 cup frozen mixed vegetables
1 cup beef gravy

PREHEAT oven to 375°F. Prepare Mashed Potatoes. Meanwhile, brown meat in large skillet; drain. ADD vegetables and gravy to meat; mix well. Spoon into 8-inch square baking dish; cover with prepared Potatoes. BAKE 20 to 25 minutes or until lightly browned.
Variation: Prepare as directed, substituting 2 cups chopped cooked chicken for the browned ground beef and chicken gravy for the beef gravy.
Dana's Note: I used leftovers from Sunday's dinner to make this. I cubed roast beef, and mixed it with gravy, chopped carrots and fresh green beans. I added a few healthy splashes of worcestershire, but would have used A-1 if I had it. I dumped it into my crockpot, and then covered it with cold leftover mashed potatoes. I let this go on high for about 4 hours, until the sauce was bubbling and the veggies were tender. I cracked open the lid and added a handful of shredded cheese for the last 10 minutes. Easy and good!
