Bulgur Wheat Salad


I saw this recipe on pbs's everyday food and have been wanting to try it for awhile. I love red grapes, toasted nuts, feta cheese, and the thought of a healthy whole grain lunch. It was great! This salad has it all...salty and sweet, crunchy and chewy. It's unique, easy, light, healthy, and very satisfying. The toasted walnuts make it.
1/2 c bulgur wheat**
1/2 tsp salt
3/4 c boiling water
2 T fresh lemon or lime juice
1 T evoo
salt & pepper to taste
1-2 green onion, sliced on an angle
3/4 c red grapes, halved
1/4 - 1/2 c feta cheese, crumbled
1/2 c toasted walnuts (350 for 10 minutes on a sheet pan or 4-5 min in a med skillet)

Pour salt and boiling water over wheat in a medium sized bowl. Cover tightly with plastic wrap and let sit until all liquid is absorbed, about 1/2 hour. Drizzle on oil and lemon juice (I eye-balled my amounts and probably used 1/2 of what is called for) and fluff with a fork. Add rest of ingredients, sprinkling walnuts on top.* Enjoy best at room temperature. Serves 2.
*If I were storing this I would keep the walnuts seperate until just before eating to keep them crisp.
**Karen also mentioned that you can find a tutorial on simplylivingsmart dot com that will show you how to make your own bulgur wheat from your food storage. Smart! I think for now, though, I'll buy mine cheap in the bulk section.

I was able to benefit from Dana's efforts in making this salad. It is SO GOOD. You're right- the nuts made it. And the grapes. Perfect combination. And HEALTHY! Yay!
