I like meatloaf. My kids eat it well and my husband likes it on sandwiches the next day. *See Lindy's Microwave Italian Meatloaf...it's goood* This recipe, courtesy of Kristel and her 'college cookbook', is easy, I always have the ingredients on hand, and I can have dinner on the table in a half hour from concept to finish. 'Nuff said.
1 - 1 1/2 lbs lean ground beef
1 egg
1-2 lg squirts ketchup (1-2 Tbsp)
1 squirt mustard (1 tsp)
1/3 c milk
1/2 c oatmeal
salt & pepper
1/4 c minced onion *optional
Mix all together in a bowl (I prefer a fork 'cause I tend to overmix when I use my hands). Turn into a sprayed 9x9 glass dish and lightly smooth out. Place wax paper or parchment over and press so it touches the top. Microwave on high for 8-10 minutes. Drain grease. Remove paper and top with:
1 c ketchup
1/3 c brown sugar
1 tsp mustard
Microwave for 4-5 minutes more until darkened around the edges. Slighly cool.
I like this with potatoes, some kind of veggie and a green salad.

Ohhh... I forgot to say that I tried this and it was great!! I was worried about it getting all microwave-y weird (like dry on the outside and pink on the inside). It was great! Perfectly cooked and everyone loved it. Thanks!
