I love berry bars...can you tell? We've posted a few recipes similar to this one. This recipe is courtesy of allrecipes.com and I'll include some feedback found on the site. I didn't add whole wheat flour, but I'm sure it would only make these even better and a tad bit healthier. I think I do prefer Karen's berry bar recipe, but for a quick fix these were good too. They came together in about 5 minutes with very little mess.
1/2 cup packed brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt1 cup rolled oats
1/2 cup butter, softened
3/4 cup raspberry jam, seedless is optional
Preheat oven to 350 degrees. Grease one 8 inch square pan, and line with greased foil. Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture . Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge (this will keep the jam from seeping out and burning). Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.
Dana's note: I was in a hurry so I melted the butter and stirred it in until just combined. I think this makes for chewier bars. I would prefer them more crumbly and would cut in the butter next time. I lifted the bars out of the pan by the foil after about 5 minutes and set them on a rack. They were easy to cut after about 15 minutes and cool enough to eat.

-recipe doubles well using a 9x13 pan
-use apricot or other jams
-add lemon zest to the jam to enhance flavor
-can add cinnamon to the oatmeal mixture-drizzle with white or dark melted chocolate for a fancier look
