Sweet Potato Fries

1-2 sweet potatoes
olive oil
taco seasoning
sea salt

Peel and cut potatoes into steak-sized fries. Add to a glass baking dish with 2-3 Tbsp water and cover with plastic wrap. Microwave for about 4 minutes, or until tender. These will cook up much faster than potatoes. Meanwhile, preheat the oven broiler.
Drain fries. Drizzle lightly with olive oil, sprinkle generously with taco seasoning. Toss to combine. Spread on a lightly greased sheet pan and broil until browned and crisped. Flip gently and broil again until desired crispness. Sprinkle with sea salt and enjoy!

*Note: sweet potatoes/yams...whatever. I ignore the names and look for the orange-looking variety. These are good dipped in plum sauce.

**If you're ever in Vegas at the Green Valley Station outdoor mall (or in AZ or CA or wherever else), seek out Tacone and have their Sweet Potato Fries with sweet dipping sauce...deep fried and SOOO worth it.
