Oh and also, did you say you freeze fresh gingerroot? If so, do you thaw it before using?

I'll get to the gyoza...promise! I do freeze fresh ginger. Just wrap it well and then try not to cut off your fingers when you peel and slice off a frozen chunk. I mince it up from there, or better yet, use your microplane ;0)
