I needed a quick recipe that would take my chicken to the grill without first marinating it. Don't get me wrong...I LOVE a good marinade, but I don't often have it together enough to do one in advance. A rub was the solution! This one is simple and can be kept ready to use. It has a kick, so adjust as necessary for your family. I've used this chicken alone, or on salads, or cut into chicken salad.
2 1/2 Tbsp paprika
1 Tbsp garlic powder
1 Tbsp salt
1 Tbsp dried thyme
1 Tbsp onion powder
1/8 tsp ground cayenne pepper *REVISED FROM 1/4 tsp*
1 Tbsp ground black pepper
boneless, skinless chicken breasts or tenders
Mix all dried ingredients well. Rub into both sides of chicken. Lightly drizzle chicken with olive oil and place on hot grill, 5-8 mintes per side, depending on thickness. Remove and let rest 5-10 minutes before slicing. Store uncontaminated remaining rub in an airtight container for later use on fish, meats or veggies.
Dana's note: The spices in this recipe can be played with, according to your taste. The first time I used this I was out of onion powder, and I went without it and liked it. I've also replaced the thyme with rosemary. I think I'll hunt down some kind of cumin rub next...oh how I love cumin!
*I reduced the cayenne. Try it this way first, then add more as you please!
