We had a plant in the backyard growing up that was plentiful to say the least...
and the thing could not be killed.
At the end of each growing season, with my mom's okay
my brothers would take whatever tool they could find to attack the plant.
It was axed, weed-whacked, and mowed over, many times
and grew back the following year ever strong.
Thank goodness, because my mom could turn the unbearably sour stalks
into the most amazing summer desserts.
Rhubarb reminds me of home.
So when I finally had a garden of my own I searched long and hard for a rhubarb start.
Couldn't find one anywhere.
I tried to bring one across the border from Canada into the US.
It was confiscated by the athorities. No joke.
I finally have a beautiful rhubarb plant growing in my garden.
Rhubarb, I will never take you for granted again.
Enjoy the following cake recipe, and a few more rhubarb favorites to come.
