Creamy Pasta Primavera

A HUGE yahoo to Dana for being so good about posting and actually taking pictures! WOW! This is my first one in years, right? Sorry girls - I will try to do better!

This is an absolute favorite of mine - I found it in a Kraft magazine last summer (did you know you can sign up on their website for their free magazine? It is great!)

Creamy Pasta Primavera

3 c. Penne Pasta
2 Tbsp. Zesty Italian Dressing (prepared)
1 1/2 lbs. Chicken, cubed
2 Zucchini, cubed
1 1/2 cups Asparagus, cut into 1" slices
1 Red or Orange Pepper, chopped
1 cup Chicken Broth
4 oz. Cream Cheese, cubed
1/4 cup Grated Parmesan Cheese (I use fresh grated)

Cook pasta as directed. Heat Italian dressing in skillet. Add chicken and vegetables and cook 10-12 minutes or until done. Stir often. Add chicken broth and cream cheese - cook one minute or until cheese is melted. Add Parmesan cheese. Drain Pasta. Add mixture and toss together. Cook 1 minute or until heated through.

* I use whatever vegetables I have at the time in this dish - we love the flavors of the sauce & it is so yummy, even Lydia will eat some!
