Pumpkin Bread

3 C. canned pumpkin (one big can)
1 1/2 C. vegetable oil
4 C. white sugar
6 eggs
4 3/4 C. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground nutmeg
1 1/2 tsp. cloves

Preaheat oven to 350 degrees. Grease and flour three 9x5 inch loaf pans. In large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well-blended. Divide the batter evenly between the prepared pans. Bake in preheated oven for 45 minutes to 1 hour.

Karen's notes: I don't have 3 9x5" pans, so I do two loaves and 12 muffins, and it comes out perfectly. The muffins take about 30 minutes, and the loaves take at least 65 minutes here in the Idaho elevation. I usually add something to the batter- raisins, nuts, and/or chocolate chips, in varying amounts. Usually I'll add one bag of semi-sweet chocolate chips per batch.

One of the best I've ever had *polishing off the last piece as I write*. I love that this recipe makes a lot and uses a whole can! For me chocolate chips are a must.
