I need more ideas and inspiration. I was going to make this really good pressure cooker white chicken chili today, and it would have been awesome because of this, but I forgot to soak my beans overnight. Maybe I'll do a quick soak. Here's a link to the recipe:

They did a demo on this at an Enrichment Night last fall. I'm pretty sure they left out the jalepenos and allspice and added in some cumin, but I'm not sure. Do you remember, Dana? It was so very delicious.
