Parmesan-Ritz Chicken


3-4 Chicken breasts
1/2 - 1 c plain yogurt*
1 1/2 cups of Ritz crackers, crushed
3 Tbsp parmesean cheese
1 tsp seasoning salt
1 tsp garlic powder
2-3 Tbsp melted butter

Preheat oven to 375. Spray baking pan really well. Mix the dry ingredients together (crackers, cheese, seasoning). Pat the chicken dry & dip in the yogurt. Dip chicken in the dry ingredient mix. Lay chicken on pan & pour melted butter on top. Bake at 375 for 30-35 minutes.

*Can substitute an egg wash (1-2 eggs and a few T milk) to use instead of yogurt.

I really liked this recipe. Next time I think I'll pound the chicken flat and roll it up with something inside (swiss and ham, spinach and bacon, etc), OR I'll make some kind of herb-butter sauce to go with it. I think it's fine on it's own, but I was desiring some kind of something else with it (more butter please).
PS. Amazing that I actually took a picture? I was waiting for my hubby to wash up and come to dinner, saw the camera nearby and got ambitious.

Hey! I love the picture!! That makes me want to take more pictures of my recipes. That looks delicious! Much better than the frozen lump of lasagna we had for dinner last night!
