So it's leftover night tonight...a reprise of last night's dinner, but I'll share it anyways seeing as it was really one of the first meals I've made it weeks! This rib recipe is perhaps the easiest thing to do ever...but it's one of my favorites and we always begged my mom to make them.
Shoyu is Japanese for soy sauce.
Shoyu Ribs
3-4 lbs pork spareribs
2-3 T soy sauce
Trim ribs of as much fat as you can. Place on a sprayed rack over a cookie sheet (cover the cookie sheet with foil for quick clean-up, or if you don't have a rack put the ribs directly on the foil). Baste with 1-2 T of soy sauce and bake at 375 for about 1 hr, basting and turning once more until tender and easy to pull apart. More or less baking time may be needed depending on the thickness of the ribs - mine were cut almost country style and took about 1 hour 15 minutes.
Along with the ribs we had baked potatoes, steamed artichokes and corn.

Um... YUM! That sounds so good! I'm surprised I didn't smell it cooking from my house! :) Incidentally, they have ribs on sale at Albertsons this week. I better go get some!
Oh yeah. I should mention that I'm a soy sauce snob. My preference for soy sauce is the Japanese Yamasa brand. I think that's important for this recipe. Second runner-up would be the Kikoman brand...but absolutely NO china-lily (or whatever it's called!)
