Cake Pops - HAPPY HALLOWEEN!








These cake pops are all the rage out there these days. They're pretty easy, very cute, and surprisingly delicious. They were a fun addition to my party table this year, though it took time for my guests to realize they were cake pops and not suckers! I first came across these wonders here, and believe me when I say that Bakerella's versions are perfection. Visit her blog to get more as you go pictures and ideas.

Ingredients
1 cake mix, prepared and cooled
1 can of frosting
*I used chocolate cake and chocolate fudge frosting - really good. Also used cherry chip cake and cream cheese frosting - scored points from my hubby because it's his fav cake.

Directions
1. Finely crumble cake into a large bowl. With a spoon, gingerly stir in about 3/4 of the frosting and mix until well combined.
2. Use a small cookie scoop and drop cake into your hands and form into balls, (or other shapes), trying to handle as little as possible. I sprayed my hands with pam every 5 or so balls and still ended up rinsing them off a few times...this gets a little messy. Makes aprox. 50 balls.
3. Insert a stick about 2/3 of the way in - I also dipped the stick in some melted chocolate before inserting for extra hold. Lay on parchment and freeze for about an hour. At this point you can store the pops airtight in the freezer until ready to decorate.
4. Prepare a holder for your dipped pops. I used some styrofoam and 'pre-drilled' holes with a tootpick so the sticks would hold firm when inserted.
5. If using melties, (which I used for my mummies) melt in a glass bowl in the microwave at medium heat for 30 sec to 1 minute intervals, stirring until melted. Dip pops in, using a toothpick or spoon for coverage. Gently tap off excess and set into holder. Note: try to find the color of melties you need as most type of food coloring will affect or mess up the dipping consistency. I found white melties in the bulk section of Winco.
Store bought frosting can be used as well, but will take a longer to set up after dipped. I used a cream cheese one and added food coloring for my pumpkins. For this, melt the un-lidded frosting in the microwave until runny, and simply dip pops into the container. For the pumpkins I added green tic tacs for the stem. Bakerella uses a edible marking pen to make faces. I think if you want to go that route you'd be better off using the melties instead of the frosting. I had a pen but decided to keep it simple. Note: my sister bought some expensive edible marking pens from Michaels, and they didn't work so great.
*For mummies, set some m&m eyeballs into the balls just after dipping OR 'glue' them on afterwards. When the pops are fairly set, drizzle with extra melty to make the wrappings.

6. Display and enjoy! Pops can be stored room temperature for a day or in the fridge for 2-3 days.
