Honey Garlic Pork Ribs

4 lbs pork spareribs or loin back ribs
1 c honey
1 c packed brown sugar
1/3 c soy sauce
1/2 tsp garlic powder OR 2 fresh cloves, minced
1/2 tsp ground ginger OR 1 inch fresh ginger, minced
1 tsp ground mustard

Trim any visible fat from ribs and cut into serving size pieces; place in a large ziplock bag. Combine the remaining ingredients and pour 2/3 over the ribs. Seal and turn to coat. Marinate in the fridge for several hours or overnight *which is best!*. Turn occasionally.

Drain and discard marinade. Place ribs on a rack on a foil-lined baking sheet. Cover tightly with foil and bake at 350 for an hour. Drain. Brush the reserved marinade over the ribs. Bake, uncovered, for another 30-40 minutes, brushing occasionally with the pan juices, until the meat is very tender and pulls from the bone.

Dana's Note: I loved the flavor of this sauce and I'd definitely recommend the fresh garlic and ginger, if you have it. Overall the meat was very good and tender. In the future I might try to tenderize the meat even further by putting it in the crock for a few hours (even 4-5), then under the broiler with the reserved marinade to crisp up and finish. I also might even put the ribs in the fridge after the first bake, to remove some of the solidified fat. I'll use this recipe again and again.
