Serves 4
3 chicken breast
Cornstarch
3 eggs
Sauce: (I double this)
¼ cup pineapple juice
½ cup red wine vinegar
¾ cup sugar
3 Tbs ketchup
1 Tbs soy sauce
½ tsp salt
Directions:
Beat three eggs in a bowl. Cut chicken into bite size pieces. Dip chicken into egg and then roll in cornstarch. Fry chicken in oil. Sprinkle with garlic salt. Place chicken in 9x13 pan.
Mix sauce ingredients together and bring to boil. Pour over chicken.
Bake 350 for 50 minutes uncovered.
Serve with rice. You can top with pineapple pieces if desired. Steamed fresh broccoli is a great side dish with this.
