I don't know who Julie is, but her pancakes are superb!! :D They are lowfat, low sugar, whole grain, and really really good. I got this recipe off of the blog of my sister-in-law's friend and former roommate (and she is also one of my Dad's former cross-country runners--- little trivia for ya), Janeen. She is a very healthy eater and excellent cook, so I hear... which I believe because all of the recipes I've tried on her site have been great. Mix together:
1 c. whole wheat flour (freshly ground)
1 T. sugar
3 tsp baking powder
1/4 tsp salt
In seperate bowl mix:
3/4 c. soy milk (add more if you like your pancakes a little flatter)
1 egg
1 T. safflower oil
1 grated apple
1/2 c. fresh or frozen blueberries (add less or more depending on how you like them)
1/2-3/4 c. finely chopped pecans (food processor)
Stir together the wet and dry ingredients until just moistened. Cook on griddle. Yum, Yum!
(I double this recipe for my family).
Notes: I use regular milk instead of soy milk, and canola oil instead of safflower, just because that's what I have. I've used several different kinds of apples in this recipe, and golden delicious were our favorite. The peels were so thin on those that I just grated it peel and all. The other apples I've tried, I had to peel them because the peels were thicker. But any apple works.

Loved this recipe. I had to watch my griddle temp closely, probably because of the amount of sweetness (apples, etc.)in the batter. Will do this one over and over.
