1/4 tsp. Cream of Tartar
dash of salt
1/3 cup Water
2 Egg Whites
1 tsp. Vanilla
Stir together sugar, cream of tartar, and dash of salt in a small saucepan. Add Water. Cook and stir over medium heat until mixture is bubbly and sugar is dissolved. In mixing bowl (I use my Kitchen Aid - it takes a while so needs to be a heavy-duty mixer) combine egg whites and vanilla. Add syrup mixture VERY slowly to unbeaten egg whites, while beating constantly on high speed. Mix until stiff peaks form (about 7 minutes).
*Note: This frosting is yummy and marshmallow-like, but needs to be served fairly immediately. If it is left out, it gets pretty sticky and dries out, but still tastes good. If put in the fridge, it tends to flatten. It spreads really easily, which is why I love it when I am doing cut cakes - especially when it comes to covering those crumbs!
