Jalapeno Popper Craze

Confession...I'm a little obsessed with Pioneer Woman.
The photos.
The ranch.
The dog.
Her hilarious culinary commentary.
I heart P-Dub.
She really makes me smile.

Have you tried her food?

We were addicted to these over the holidays.
Probably made/ate them 5-6 times at least.
Brian is now the Head Jalapeno Popper Preparer.
*say it 5 times fast*
He converted many to their deliciousness.

In her cookbook, she also adds minced green onions and sharp grated cheddar to the cream cheese.
I recommend it.

A few tips we have learned:

  • Wear gloves (or ziplock baggies) when prepping and filling the peppers. Even if you don't touch your eyes or any other sensitive area, if you skip this tip your fingers just might throb into the night.

  • Scrape your jalapenos well, including seeds and membranes. Overall we have never made a batch of these that we couldn't polish off, but we have had batches that are extremely hot/spicy. We're not sure what makes some batches hotter than others (perhaps the age of the jalapenos?). 
Beware: This recipe is NOT for the sensitive.

  • Soak your toothpics in water so they don't brown or burn. Also, beware that if you choose to keep the stems in-tact, they literally catch on fire in the microwave during the next-day's snacking venture.

  • We like 'em with and without bbq sauce. Sweet Baby Ray's BBQ sauce is highly reccomended.

  • Roast these well and they become a little more mild. (Usually about 1 hr 20 mins at 300 degrees.)  Sometimes I like to broil them at the end to crisp up the bacon a tad.

  • SERVE WITH MILK or your favorite flame-distinguishing beverage.
Confession #2. I tried to get my cookbook signed by THE actual P-Dub herself while in Utah this past winter.
I was run over by an anxious mob of hundreds of Utah moms while waiting in line.
Not really.
But there were so many people there that I didn't even get a glimpse of her coppery head, and I defeatedly left without a signiture.
Sad, huh!

Yes, that IS sad! Someday we'll go to the Ranch and meet her. :D Because I'm going to win a trip and Mike doesn't "have time" to go. Whatever. Anyway, I second the jalapeño poppers. Yummers.
