Caramel Coconut Chex Mix


I am not a coconut lover. Unless it’s toasted over Paula Deen Cake (recipe forthcoming), I will easily pass it by. Then I received a big batch of this from my neighbor* for Christmas…and I found a reason to keep coconut on hand. This is SOOOOoooo addictive. Consider yourself warned.

1 c butter
2 c brown sugar
½ c karo syrup
½ tsp salt
1 tsp vanilla
1 box rice chex
1 box corn chex
1 box golden grahams
½-1 c coconut
½ c slivered almonds


Combine butter, brown sugar, karo and salt. Bring to a boil over medium heat and simmer 2-3 minutes. Remove from heat, stir in vanilla. Pour over mixed cereal and stir gently to coat**, sprinkling in coconut and almonds as you go. Cool and serve!

**variation: After mixing with cereal this can be baked in a 200 oven for an hour, stirring every 20 minutes or so. This will make a crunchier more set-up mix.

*Over the holidays I HAD to have some of this and because I had left my neighbor Becky’s recipe at home, I desperately searched until I found the above version online. I think it is very similar to Becky’s in the outcome, but with less butter and syrup…enabling me to eat more of it, right? You can use her recipe as follows in place of the first 5 ingredients above, it’s really, really good (in a really, really bad way!):

2 c light corn syrup
2 c sugar
1 ½ c butter
Directions: mix and bring to a boil for 2 minutes. Pour over cereal, cool and enjoy.

YUM YUM YUM YUM YUM. Can I just say YUM?? (Yum is a weird word. Is it really a word? Just wondering.) I'm so glad I'm Dana's neighbor, because I could eat this till I die. Which won't be too far down the road if I keep eating it. But it is soooo good. Thanks for posting!

Did you know that my kids call this Evil Chex mix? Because I called it that one time, and it totally stuck. Now they'll ask me to make Evil Chex Mix now and then. I even typed it up in my cookbook and called it Evil Chex Mix. So from this day forward-- that is what it is called in the Summers house.
