My adorable little Japanese grandma came to visit me. 10 long hours in the car, just to sit contently at my low-key house and play endless games of 'go-fish' with my son. She brought me a bucket of these. They didn't draw my attention at first...but my brother tipped me off by sneaking them by the handful and after one bite I was addicted. They may appear cute and harmless, but they are lethal. Especially when they are made by your Bachan, with love.
1 cup butter, softened
1 cup sugar
1 tsp vanilla
1 egg
1 1/2 cups flour*
1 tsp baking powder
rice krispies - Bachan like the Christmas colored krispies, or she likes to put a scant finger print of raspberry jam in the middle when they come out of the oven, for color. In this picture I used fruity pebbles.
Cream butter and sugar well. Blend in vanilla and egg. Mix flour and powder well and add in 2-3 increments to sugar mixture until just incorporated. Chill for 15 minutes. Make 1/2 inch balls and roll in krispies. Bake at 325 for about 10 minutes until just golden, don't over bake.
*You may need additional flour in different altitudes, unless you like thin and lacy cookies. I used almost a 1/3 cup more here in Idaho.
